The Hyelzas cheese dairy is located on the Causse Méjean in Lozère, a UNESCO World Heritage site.

Our cheeses are hand-molded with the utmost care, and rigorous controls are carried out at every stage of production to ensure that our raw or thermized ewe's milk cheeses are tasty and of the highest quality.

Maturation varies from 9 to 21 days for soft cheeses and several months for tommes.
