This round, thick cheese has a natural rind, reddish-ochre or brown, rough and dry to the touch. Texture and type of cheese: soft and firm pressed cheese, melting in the mouth.
Type of production: made from raw or pasteurised milk, curdled with the help of ferments and rennet, cut into cubes, drained in bags, placed in tins, turned over about ten times, salted regularly, checked inside and out.
