The Comté PDO presents 2 types of Comté: the Comté with a "green band" and the Comté with a "brown band". The latter is actually a "downgraded" Comté. . But it is still a Comté AOP !
Just before being marketed, the Comté cheese is graded: from 12 to 14/20, the Comté cheese receives a brown band and from 15 to 20/20, the Comté cheese receives a green band.
The whole wheels will be cut in two for shipping.
