Brézain is a French cheese, produced in Haute-Savoie. It was born in 1991 in La Balme-de-Thuy.

It is a raclette cheese cooked over a wood fire, made from cow's milk, which has a very fruity taste and is less salty than other raclette cheeses such as Raclette de Savoie.

The great particularity of its production is that it is exposed to a fire of beech and juniper wood, which gives it this melting flavour and this beautiful brown-orange rind. It has a white to ivory-coloured uncooked pressed paste.
