To be certified PDO, Sainte-Maure de Touraine cheese must be aged for at least 10 days, and it is produced by farmers as well as by artisanal or industrial dairies. The mold is wider on one side to facilitate the filling with a ladle.A peasant legend says that it is necessary to start by cutting the cheese by its biggest side, otherwise the goat whose milk is used will not give any more! Among all the cheeses with goat's milk, this one has the greatest volume of production.
