The double cream of Gruyere is produced in the canton of Fribourg (Switzerland).it is made with the milk used to make Gruyere and contains 50% fat, giving it a creamy and smoothness with aromas of Swiss pastures.to recover the cream, we let the milk rest after milking, it rises to the surface being denser than milk.it is used as it is, we taste the cream, usually with the meringues of Gruyere, plain or accompanied by some red fruits
