It is made exclusively from raw cow's milk, fed on natural fodder (grass in summer and hay in winter) and without any additives or silage.
It is also lactose-free. Gruyère is a Swiss cheese from the Gruyère region in the Canton of Fribourg.
It is also produced in the Cantons of Vaud, Neuchâtel, Jura and Bern.

It can be recognised by its pleasant smell of hazelnut and walnut.
Its slow maturation in the maturing cellar lasts between five and eighteen months (or even longer!) depending on the taste of the AOC Gruyère that you are looking for.
