Made from milk collected on the high plateaus of the Margeride, in the heart of the Gévaudan, this uncooked pressed tomme is typical of the Auvergne.
The maturing period of this 7kg tomme varies between 20 and 60 days, a period punctuated by daily care by the master maturers, who control its homogeneous development.
The tomme de Montagne has a surprisingly supple ivory paste, melting in the mouth, hidden by a natural grey rind.
Light and fruity, its flavor is impregnated with all the flavors of mountain milk and a multitude of floral aromas.
