The application for AOC recognition was initiated in 1999 by the Syndicat de Promotion du Beurre et de la Crème de Bresse.
This application concerns churned butter and thick and semi-thick Bresse cream.
The specifications for Beurre and Crème de Bresse show the reputation of the products for several generations, the know-how of the producers and companies, the protection of the bocage landscape, the commitment and sustainability of the farmers, and the food autonomy of the farms.
Today, Bresse has three partner dairies and 200 milk producers.
The date of 26 January 2012 can be considered as the date of final recognition of the AOC since it corresponds to the approval of the specifications by the INAO.
