The cheese dairy is organized as a cooperative following the regrouping of small hamlet cheese dairies.it gathers the milk of 12 producers scattered over 7 communes.its main production is the bleu de Gex but it also makes Comté, tomme, butter and white cheeses.the butter made from raw milk is made in a churn from cooled raw cream. It is the mechanical action of the churn (with the rotation of a central axis) which will allow the obtaining of butter.it will be then rinsed then mixed in order to withdraw the maximum of water.to finish the moulding with the hand allows this plate of characteristic butter with a flower or a cow.DLC: 15 days to be preserved at +4°C
