Comté, the "lord of cheeses", is impossible to describe in a few words because of its incredible diversity of taste.
Some are mild, others more salty and milky, while others are rich in aroma and roasted.
The variability of the maturing period (four months minimum) means that Comté cheeses from different seasons can be obtained at any time.
The taste of Comté has several components: the saltiness is mainly due to the salt with which the cheese is rubbed during the maturing process; the acidity is not very intense and is more noticeable in young cheeses; the sweetness is quite clear in some cheeses; the bitterness is sometimes found at the end of the tasting.
