However, this is not salt but small clusters of tyrosine, an amino acid that gives the cheese its taste. (The cheese is matured for 15 months or more. The older the cheese gets, the more it improves in taste. A quality Comté cheese can be recognized by its crystals.
However, a Comté that is too old (36 months or more) is not a guarantee of quality! For our part, we work with selected Comté cheeses from 12 to 26 months.
It is a cheese for keeping, which requires a large quantity of milk and is made in a dairy.
