The Langres appellation area is centred on the Langres plateau, which is rich in pastures.
This cheese from the Champagne region, made from raw cow's milk, is distinguished by its very fine texture and its unique shape with a bowl at the top.
Langres is never turned over during the maturing process so that the moisture in the cheese gradually migrates downwards, forming a hollow at the top.

Like its cousins, Soumaintrain and Epoisses, Langres has a strong taste with a creamy, melting paste.
It is a raw cow's milk cheese and cheese lovers can fill its bowl-shaped top with marc de Bourgogne!
