Made from milk collected on the high plateaux of the Margeride, in the heart of the Gévaudan, this uncooked pressed tomme is typical of the Auvergne.
The ripening period of this 7kg tomme varies between 20 and 60 days, a period punctuated by daily care by the master ripeners, who control its homogeneous development.
The tomme de Montagne has a surprisingly supple ivory paste, melting in the mouth, hidden by a natural grey rind.
Light and fruity, its flavour is impregnated with all the flavours of mountain milk and a multitude of floral aromas.
