Tomme of Jura originates from the Jurassic mountains in Franche-Comté and is distributed rather locally.
It is a pressed, uncooked cow's milk cheese. It is shaped like a cheese wheel and has a greyish rind covered with white mould.
It is characterised by its semi-hard paste and small holes. It contains 30% fat, melts under the tongue and has a light scent of milk and hazelnuts.
