Mothais sur feuille is a French goat's milk cheese. It takes its name from the commune of La Mothe-Saint-Héray, in the Deux-Sèvres, but its production area is wider.
It is produced in the southern Poitou region, specifically in the southern Deux-Sèvres, southern Vienne, northern Charente and Charente-Maritime. It has been found on local markets since 1840.
A syndicat de défense du Mothais et Mothais-sur-le feuille was formed in 2002 to protect this cheese and to apply for an Appellation d'Origine Contrôlée.
It is a cheese made from fresh, raw, whole goat's milk. It is obtained by a very slow curdling process, and matured on a chestnut or plane tree leaf, which will pump out the humidity and thus give Mothais sur feuille a softer, creamier paste and a thinner rind.
It is shaped like a disc, 10 to 12 cm in diameter and 2 to 3 cm high. It weighs between 180 and 200 grams when sold. It contains 45% fat.
