ESTABLISHED IN LUCCIANA, Haute-Corse, SINCE 1983, Société Fromagère Corse offers a range of cheeses based on pastoral know-how. The men and women of the cheese dairy are committed to preserving and promoting the traditions and richness of the terroir of the Isle of Beauty, also known as the Island of Shepherds. Pastoralism is an integral part of Corsica. The mountainous landscape makes it easier to raise ewes than cows.
The cheese dairy collects and processes milk from 70 shepherds producing milk from Corsican ewes grazing within a 200-kilometer radius of the cheese dairy. These walking ewes can cover up to ten kilometers a day to feed themselves, and produce an average of 140 liters of milk a year per head. This richly-flavored milk is collected between October and July, in line with the ewes' natural production rhythm. Cheeses are therefore not produced the rest of the year.
Made from 100% Corsican sheep's milk, the washed rind is regularly rubbed with a mixture of water and chestnut beer, a traditional and emblematic Corsican specialty. This step allows it to develop subtle woody notes and a beige-orange rind. Casanu rubbed with chestnut beer is the fruit of 100% Corsican know-how, a tender-hearted cheese that has won several awards at the Concours Général Agricole.
