The older the cheese, the more it improves in taste. However, a Comté that is too old (36 months or more) is not a guarantee of quality! For our part, we work with selected Comté cheeses from 12 to 26 months.
It is a cheese for ageing, which requires a large quantity of milk and is made in a dairy.
