Crottin is a great classic and an emblem of French goat cheese!
Produced throughout France, the rind of the young crottin is fine and barely formed, discreetly wrinkled and white.
After several days of maturing, it becomes fluffy and dotted with grey and blue spots.
Its paste is white, smooth and compact and becomes brittle with maturing.
The crottin has a tangy flavour with a lactic taste of goat, nuts and hazelnuts which intensifies with maturing.
When its rind forms, aromas of undergrowth and mushrooms develop.
