The real Nnatua Nolo sauce with crayfish butter is a béchamel sauce with one exception: with organic whole milk, flour and crayfish butter!

The Astacus Astacus crayfish, known as "red legs", which used to be found in the lakes of the Nantua region, are now fished in European waters.

They are cooked and crushed with their flesh to give all their flavor and natural orange color to the sauce.
