The Ancestral Method, thanks to its incomplete fermentation, is characterized by
a low alcoholic degree (8° on average)
natural and indigenous yeasts
a manual harvest of the grape varieties
a reasoned phytosanitary control
grassed hillsides
On a vineyard of 7 ha, they produce AOC (Appelation d'Origine Contrôlée) wines called VIN DU BUGEY sparkling or pétillant CERDON (Méthode ancestrale).
The work of the vines is done by hand and the wine making process is done according to the Ancestral Method.
The CERDON, this sparkling wine with a pinkish color, elaborated by spontaneous fermentation in the bottle, is titled at 8% of alcohol volume and will accompany very well your aperitifs and/or your desserts.
The domain is located in the heart of the Cerdonnais vineyard in the hamlet of Vieillard, in the commune of Jujurieux (Ain) halfway between Lyon and Geneva.
