A three cheese fondue with a subtle blend of abundance and a delicate taste of hazelnut. The Beaufort "the prince of Gruyères" with its firm, ivory to pale yellow paste, gives a fruity and unctuous taste in the mouth.

And the "lord of the cheeses" Franc-Comtois, a Comté of 18 months, slightly salty which will raise your fondue.

Cheeses made from raw cow's milk.

The bottle of white wine will be selected by the master cheesemaker and will not correspond especially to the photo.

The maturing of Comté cheese begins with salting, which is done by soaking in brine or salting with dry salt over the entire surface of the cheese wheel.

It is then rubbed with morge (leaven).

It is matured for a minimum of four months, but more often for eight to ten months; even eighteen to twenty-four months.

Abondance is made in Haute-Savoie with the whole milk of cows called "Abondance".

It is matured for four to six months in a cool, damp cellar with washings.

Only three breeds of cows are allowed to produce the milk.

Beaufort is a cheese made from raw cow's milk.

It is molded in the shape of a wheel with a slightly concave heel.

It is a cheese produced in Savoy in a production area that includes the Beaufortain valley from which it takes its name.

Excellente fondue savoyarde "A.B.C." mon mémo pour me souvenir des fromages. Abondance, Beaufort et Comté déjà toute râpée.Le vin âpre "coteau de l'Ain" est tout a fait ce qui convient pour la cuisson du fromage et une bonne digestion ou un Apremont. MA RECETTE : Je frotte les paroies de mon craquellon à l'ail je fais chauffer la 1/2 bouteille de vin doucementet j'ajoute le fromage petit à petit sans jamais faire bouillir en tournant à la cuiller de bois puis quand çà épaissit et en fin de cuisson j'ajoute 1/2 verre de kirch,du poivre et de la noix de muscade. La veille je coupe 1/2 baguette de pain par personne pour que le pain rassisse et s'imbile bien du fromage sur la fourchette à fondue. Attention celui qui fait tomber son pain dans le craquelon paye sa bouteille. Un plat très conviviable à votre tour d'essayer. MERCI CHAT-BO
