This cheese is recommended for your cooked dishes. The Comté of kitchen, is a cheese which does not answer the standards of taste of the Comté PDO
Comté is a raw milk cheese with a pressed cooked paste.
One can notice the crystallization of salt in the paste with age. However, it is not salt but small clusters of tyrosine, an amino acid that gives the cheese its taste. (The cheese is matured for 15 months or more. The older the Comté, the more it improves in taste.
However, a Comté that is too old (36 months or more) is not a guarantee of quality! For our part, we work with selected Comté cheeses aged between 12 and 26 months.
It is a cheese for ageing, which requires a large quantity of milk and is made in a dairy.
