In 1956, Robert and Simone Berthaut revived the Epoisses cheese, which was on the verge of extinction, by respecting an age-old recipe and procedure. Since then, the Berthaut cheese dairy has delivered a product of great value associated with the French culinary heritage. In order to meet its quality requirements, the cheese dairy goes beyond the Epoisses specifications with a product that benefits from 5 weeks of maturing and up to 9 rubbings gradually enriched with Marc de Bourgogne.
