The Pure Ewe Pyrenees cheeses are some 3 000 years of history, tradition and know-how that each shepherd, craftsman and producer strives to develop in order to make their passion better known.
Around two sectors, farm and dairy, quality and innovation are the rhythm of this market which has been growing for several years.

The Pure Pyrenean Ewe cheeses are made from ewe's milk, a milk of exceptional quality coming mainly from three breeds of animals, representative of the region : the Basco Béarnaises and the Manech, with red or black heads. If the milk of these ewes is exceptional, it is also very rare : it takes 22 ewes to obtain the quantity equivalent to the milking of a single cow !
The Basco Béarnaise and Manech ewes are local and rustic breeds, whose milk brings the aromas, the finesse and all the originality of the Pur Brebis Pyrénées cheeses.
Symbols of the Basque mountains, the Manech red-headed ewes are the "privileged" breed for the production of Pure Pyrenean Ewe Cheeses, and are also the most numerous in the Atlantic Pyrenees.
