The use of the name "chabichou" for cheese dates back to 732, when the Saracens were defeated in the region in the 8th century after the Battle of Poitiers.
Many of them left the land, but a few settled there with their families and, in particular, their herds of goats. The country was very suitable for the "poor man's cow", as the pastures were of good quality.
A cheese was made called cheblis ("goat" in Arabic), which later became known as chabichou.
However, the domestication of the goat in this region is thought to predate Roman colonisation, and the Valaisan bishop François Chabbey may be the originator of this type of cheese.
